How many school in Pulaski County ALONE are in the 5A Classification?

Sylvan Hills, Mills, North Pulaski, CAC, Robinson, LR Christian, Pulaski Academy, LR McClellan

Does it just make too much sense to call that the 5A Central?

It makes too much sense.  The problem that the other 74 counties dump on PuCo is that if they stay together, then the other 24 teams are way too spread out.  As I've pointed out before, if you move Beebe to the West which is not any further from the West schools then CAC is, then divide up the remaining schools into an Eastern Conference and southern conference. The only really long trips are the two Hot Springs schools to Crossett and Monticello, which in sports other than football and basketball could be divided into a western and eastern divisions and play divisonal round robins.

But that is way too simple.
